I like Thursdays for two reasons… firstly it is so close to Friday… and after Friday it’s the weekend 🙂 ! And the second reason… is that on Thursday the fresh fish comes straight off the boat and into our local larder. With this in mind I really felt like having fish tonight for dinner. Oliver’s Choice received a great comment from a OC friend and fellow allergy mum letting us know about an amazing ‘béchamel’ sauce recipe that she uses for lots of different and amazing dishes… lasagne, tuna pasta, chicken pie, just to name a few… so I thought YUM! I have not had fish mornay since we went dairy-free, egg-free and I would love that and I think that the kids would too!! And… we got to use the Varoma!!
Fish Mornay – Dairy-free
INGREDIENTS: x4 flakey fillets, x2 carrots chopped, x8 broccoli florets, x1 leek, 1tblspn coconut oil, 400g cauliflower, 300g water, 1-2 tbsp vegetable stock concentrate (from Everyday Cookbook Thermomix), pepper to taste, 2 tbsp soy milk, 1 tblspn Nuttelex
METHOD: Line Varoma tray with baking paper. Lay fish fillets, chopped carrots and broccoli florets in Varoma.
Fill TM bowl with 500g of water. Put on lid. Place Varoma on top of life. Set to Varoma/20mins/speed 1.
Take Varoma off and let rest.
Empty water out of TM bowl and dry. Roughly chop white part of leek and put into TM bowl. 10 secs/speed 5. Scrape down side with spatula.
Add 1 tblsp coconut oil and sauté for 100 degrees/2 mins/speed 1.
Add 400g cauliflower and blitz for 20 secs/speed 7.
Add 300g water and 1-2 tbsp homemade TM vegetable stock concentrate. Add pepper to taste. Cook 100 degrees/20 mins/speed 1.
Add 2 tbspns soymilk and 1 tblspn Nuttelex. Puree until completely smooth. Approx. 1 min/speed 9.
Add flaked cooked fish, carrots and broccoli. Mix with spatula. Turn onto ‘reverse’/1 min/speed 1 to mix fish, carrots and broccoli through the sauce mixture.
We served the fish mornay with basmati rice.
Enjoy!! This served a good serving for all four of us and seconds for a couple of us (Mr Big and Mr Bigger). And a good serving for lunch for the boys tomorrow.
