It has turned wet, wild, windy and freezing here today. It was a great day to stay inside and turn to some comfort cookies and a cup of herbal tea.
These cookies that we created are soooo yummy we can’t express in words how amazing they are. Not only are they scrumptious… they are dairy-free, wheat-free, egg-free and nut-free too!
Here’s the recipe for you to decide how good they are for yourself 🙂
Choc Chip Cookies
Cream: ½ cup raw sugar
½ cup brown sugar
½ cup Nuttelex
50 g apple puree
½ tsp vanilla essence
Add: 1 cup plain wheat-free flour
1 cup Self-Raising wheat-free flour
¼ tsp salt
½ tsp baking powder
½ tsp bicarbonate of soda
Add: 190 g dairy-free choc chips
Method: Preheat oven to 180 degrees Celsius. Roll a spoon full of dough into a ball. Place on prepared tray and flatten. Leave a gap between each cookie as they will grow in size. Cook in pre heated oven for 8-10 minutes. Allow to cool for 10 minutes on tray before moving to cool further on a wire rack. These are absolutely amazing to eat while still warm.
