Yo Yo biscuits have a long history here in Australia. It is something that almost anyone I know would have as a childhood memory. Back to School!

Holidays are almost over for some states in Australia and the Summer break and the new school year will be starting soon for those in Europe and America. This weekend we are spending a lot of time preparing, having fun and cooking up a storm of goodies and treats that we can freeze and be ready to use in the coming term. Snowballs, sausage rolls, party pies, caramel slice, rocky road, apricot slice, nuggets, muffins, muesli bars, chocolate cake and carrot cake (click on highlighted links for recipes)… all can be prepared early and frozen… perfect to get straight from the freezer and into the lunchbox… I’ll upload the apricot slice and muesli bar recipes later today and this week…

Starting a new school term is a great opportunity to refresh and educate others about food allergies. This is another fantastic educational video made by Allergy Home to let your friends, teachers, relatives and others know about how it feels living with food allergies.

Little Tapioca Puddings

We are always looking for yummy lunch box/snack ideas. From Jude Blereau’s second book ‘Coming Home to Eat, Wholefood for the Family’ we love the Little Tapioca Puddings. We make them slightly different every time with different flavours of the season and sometimes Oliver prefers the coconut cream mixed through the tapioca mix. Whichever way and flavour we make them, they are a great snack to have at home or on the go.

Chocolate Caramel Slice

So as a mother… all I want to do for my children is give them a childhood as good as I had… if not better… I have thumbled through this journey as new challenges arise and things occur that were not expected… but throughout all of these challenges and experiences I continue to nurture and love, support and guide, give them a wonderful education and try and give them as many different experiences as possible. One experience I have not been able to give Oliver, as I had as a child, is the food experience… I often try and remind myself that he doesn’t know any different… and it has taken me many years to get my head around this… Still at birthday celebrations, Easter and Christmas I have tried over the years to recreate the things that were traditional in my childhood for Oliver (and our whole family) to enjoy. Maybe that’s why he doesn’t feel like he is missing out as I always try and reinvent whatever I loved as a child.

Dairy-free, Egg-free, Wheat-free Vanilla Custard

Today is the first day of the school holidays. I’m so excited not to have to wake up and rush to get ready and go to school. It’s a windy, blustery, cold day but it doesn’t stop us from going for a bike ride along the beach and up and down the hills. It’s a great day to ride a bike! Probably a great day to fly a kite too… I then decided to wash my bike. Now I’m starving and decided some warm custard is exactly what I would like. My brother agrees. Best Ever Dairy-free, Egg-free, Wheat-free, Nut-free Carrot Cake

This carrot cake recipe is the best especially because I make it with my mum. This is a thermomix recipe that we have fiddled with and changed to make it dairy-free, egg-free, wheat-free and nut-free but you can easily make it with the ingredients that you are not allergic to and you can also make it without a thermomix. It’s sooooo delicious because it is light and fluffy, really moist, and has a great flavour. I love it as a surprise in my lunchbox at school and I can’t wait to have some for afternoon tea this afternoon. Happy baking and enjoy!

Choc chip Banana Muffins

Every weekend we try to cook something together for the school week ahead. This weekend my choice is Choc Chip Banana muffins and Carrot cake. I will post the Carrot cake recipe later. But first off we made the Choc Chip Banana muffins and some berry one’s for my brother who loves berries. I actually bake these with my dad as he is the banana bread and muffin making king. These are sooooooo yummy especially when they are still warm and the choc chips still soft and runny…
